What is Nduja you ask? 'Nduja is a particularly spicy, spreadable pork from Italy. It is very similar to sobrassada from the Balearic Islands in Spain. It is typically made with parts of the pig such as the shoulder and belly, as well as tripe, roasted peppers and a mixture of spices. Perfect for this pasta dish.
INGREDIENTS:
300g uncooked pasta {dry weight)
150ml single cream
4 Mushrooms quartered
1/2 white onion sliced
100g Nduja
1/2 lemon
1 tbsp of Vics Ol' Smokey (checking at the end if more is needed)
Parmesan
2 sliced Garlic Cloves
METHOD:
- To make this sauce sauce start with a warm pan add Mushrooms to cook and release most of the moisture
- When they start to colour add the onion and Ndjua
- The oil will start to seep out of the Nduja and turn a fabulous
orange/red colour - Get your pasta on the go and get a pan of water up to a rolling boil
- Add the sliced Garlic to your Nduja and Ol'Smokey sauce making sure it doesn't bum
- Add the pasta to the water and cook as per packet instructions
- When the pasta is cooked drain and reserve some of the cooking water
- Add the cream to the sauce mixture and turn down the heat
- Add the cooked pasta to the Sauce and coat completely if thick add some of that pasta water
- Check seasoning
- Serve in a warm bowl with a squeeze of lemon and Parmesan to taste on top
